The El Dragon is a smooth and stunning patio sipper featuring oolong-infused tequila and pear juice. It's a calming drink, perfect for relaxing after work or on a lazy weekend afternoon. The drink's exceptional spa-like quality also makes for a memorable cocktail party drink, and the infusion is a snap to make. Oolong tea is thought to sooth nerves, help lower cholesterol, and deliver antioxidants. And it's good for the heart. It's good for the palate, too-- ripe pears provide all the sweetness the drink needs, balancing the tannins in the oolong with refined tequila notes.
1 1/2 ounce oolong-infused blanco tequila (we use Partida)
3/4 ounce fresh pear juice
3/4 ounce fresh lime juice
3 ounces soda water
lime wedges, for garnish
Shake first three ingredients together with ice, and pour into rocks glasses filled with ice. Top with soda water.
For the Infusion
Steep 1 tablespoon oolong tea in 1/2 cup of blanco tequila for two hours. We like to use Partida because of its amazing lightness and clarity -- and the oolong beautifully compliments it rather than overwhelms it.
A Note on Balance
If the pears you are using aren't fully ripe, they may not be sweet enough to counteract the acidity of the lime juice. Try cutting back on the lime just a touch, or adding simple syrup if you must.
