Farmers in the Midwest are saying this is one of the best seasons they can remember for greens. Cool, even temperatures have created juicy lettuces with surpassingly mild flavor. So when we collaborated with Gib's Bar in Madison, WI, for two signature cocktails, we knew we wanted to highlight greens. With bartender Edward Hong, we created Lettuce in the Mist, an experiential sipper that is a study in verdant flavors. The drink is built around a gem lettuce ice cube that is spritzed with Chartreuse and absinthe (think grocery store produce aisle mist). The lettuce ice then slowly melts into sparkling wine, the cocktail becoming increasingly grassy in flavor.

2 spritzes green Chartreuse
1 spritz absinthe
3-4 ounces sparkling wine
Spritz glass with chartreuse, evenly coating. Drop in lettuce ice and add sparkling wine. Spritz with absinthe.
For lettuce ice cubes: Run a head of gem lettuce through a juicer and pour liquid into ice trays. If you do not have a juicer, loosely chop gem lettuce head and put in a blender or Vitamix (add a little water to get it started). Run mixture through a sieve to remove any large pieces.
