We recently created signature cocktails for a specialty cheese event with Emmi Roth USA, a company that is bringing Swiss cheesemaker Daniel Studer's incredible products (a cheese called Scharfe Maxx) to the U.S. market. Given the Swiss connection, we wanted to work with Swiss ingredients, and so based a drink on Etter Poire Williams, a delicate yet flavorful pear liqueur. In order to highlight the herbaceous qualities of the Alpine cheese -- but not mute the beautiful nose of the Williams Poire -- we introduced gin, vermouth, flax oil, and a little cognac to round it out. We love the earthy and nutty notes of flax, but the oil is also full of essential fatty acids and Omega 3, making for a crisp Swiss cocktail with benefits!
11/2 ounces gin
3/4 ounce William Poire
1/2 ounce cognac
1/4 ounce lemon juice
flax seed oil, to wash the glass
sprig of rosemary
Lightly wash a chilled cocktail glass with flax seed oil, discarding any extra oil. Shake ingredients with ice and strain into the prepared glass. Garnish with rosemary.
